Hoppy Red Ale

A Hybrid-Style Ale with a rich, Oktoberfest inspired malt base and a slamming hop profile, very similar to an India Pale Ale. CTZ (Columbus/Tomahawk/Zeus) hops are added to the boil for bitterness, and copious amounts of Centennial hops are added during the late kettle hop addition and dry hopping post fermentation.  In the Great American Beer Festival Style Guidelines there is a gap between the American-Style Amber/Red Ale and Imperial Red Ale. This recipe was taken straight from Colby’s Homebrew Recipe book. Red Scent Ale was first brewed in 1998 and it’s fun to see that the recipe has stood the test of time and is still relevant years later. This is Colby’s favorite recipe to share with his home-brewing friends and Home Brew Mart Customers. This recipe was also brewed and served at Colby’s wedding. So it’s fitting that this recipe is the first in the Ballast Point Brewing & Spirits Homework Series. With the recipe on the label, we get to share this great beer with the world.

BELGIAN STYLE DOUBLE INDIA PALE ALE

A Hybrid-Style West Coast Double IPA fermented with the same Belgian Yeast strain we use for our famed Wahoo Wheat Beer. Flaked Wheat, Caramel 20L, Honey Malt and Acidulated Malt add complexity, sweetness, and a nice dark yellow hue to this Belgian inspired brew. Hopped four different times in the brew house with a blend of Mt. Hood, Galena, Nugget, Chinook, and Palisade add sharp bitterness with subtle fruity, fresh melon-like flavors. The addition of Belgian Candi Sugar in the boil adds a hint of caramel sweetness and also aids in a dry finish. The Belgian Yeast adds some nice clove esters along with hints of fig and spice. Copious amounts of El Dorado, Palisade, and Crystal hops are added to the Dry Hopping to create a big juicy West Coast IIPA aroma our Ballast Point Ales are known for.

English-Style India Pale Ale

The recipe for this English IPA was pulled from the archives: it was the first IPA ever brewed by Ballast Point. Williamette hops from Puterbaugh farms contribute a grassy cantaloupe aroma. Pumpkin Ale

With a deep orange hue reminiscent of pumpkin pie,a Scottish ale is the perfect backdrop for this beer.A three hour boil enhances the caramel and toffee flavors provided by the British malts. Aroma of all the lovely esters you would expect from a Belgian, without any one of them dominating or being overwhelming; think banana, clove.  This beer has a beautiful clear golden color and nice bright white head.  Medium body, a medium-dry finish, and a slight hint of bitterness give your mouth plenty to be happy about without weighing you down.  Mild floral hop notes add to the aroma and flavor.  Refreshing and restrained, this beer will make you want another glass.

ROBUST PORTER

Dark black with ruby red highlights, this Robust Porter is rich and complex. A blend of UK malts, chocolate rye and Belgian candi sugar provide a sweet chocolate, yet rich earthy quality. Malt forward with an aroma full of roasted malts, toffee and dark fruit, this National Homebrew Competition medal-winner is a great dessert beer or to pair with hearty foods. SESSION SAISON

The recipe for this Saison was pulled from our extensive R&D catalogue. It was brewed to be a flavorful and refreshing session beer that you can enjoy all day long. The beer pours a warm straw color with a slight haze. The aroma is full of spice notes that you would expect from this Saison yeast strain. Light malts with touches of rye and wheat form a great backbone to support the delicate flavor and aroma which is enhanced with a bit of hop spiciness. The body finishes light and dry. HOMEWORK SERIES BATCH NO. 8

HEFEWEIZEN

This Hefeweizen is the winning home brew recipe from our 20th Anniversary Employee Home Brew Competition. A traditional Hefeweizen, with a touch of Southern California love. Dry hopped with Mandarina Bavaria hops to accentuate the fruity, citrus aroma and flavors found in a typical hefeweizen. This beer pours a pale straw color with a light haze typically found in wheat beers and a lacy white head that lingers on the glass. With the hops and the yeast combined, it is more fruity than spicy. This character is complimented with a light malt graininess from the wheat and pilsner malts.
