When a beer begins the journey inside of an oak cask it takes endless hours and years to care for throughout its life in the barrel. Once finished aging a blend is made, and since the beginning our Barrel Aged Beer has solely been available via draft. For the first time in history we proudly introduce the first Barrel Aged product in 750 ml bottles! Our delicious Imperial Porter with a blend of cold steeped Cafe Calabria Coffee and Vanilla beans, aged in Heaven Hills Bourbon Whiskey Casks for a duration of 11 months. The exquisite art of aging produces significant warm chocolate spice notes, with over accentuated vanilla derived from the oak staves. The smooth, nutty bourbon flavor, and Oak aroma pairs well with the light roasted notes and sweet caramel undertones from the malts. Most definitely an Agers choice.

It is a beautiful thing to have your own Distillery! As soon as we were able to, we started aging brew in our own Oak Casks! This time we’ve taken our same coffee vanilla Imperial Porter and aged it in Devil’s Share Single Malt Whiskey Casks for a duration of 6 to 12 months. You can expect a deep nutty, chocolate, oak aroma. Smooth malty undertones with vanilla notes that come from the Oak and the Single Malt, this is definitely one that is here to stay.

Our Piper Down Scottish Ale hits all the right notes for the Ballast Point Bagpipe Corps that inspired it. We created this very low hopped, malty ale for the band to enjoy using UK Maris Otter malt, roasted barley, UK hops and low fermentation temperatures. Then we let the brew’s sweet complexity build over a three-hour boil. Full of roasted caramel flavor, it’s a pub classic with Ballast Point personality.

The Ballast Point Brewing Company Bag Pipe Band was the inspiration behind this Scottish Ale. BPB&S owner Jack White wanted a moderate alcohol, low hopped and malty ale to be enjoyed by the band. Using UK Maris Otter malt, roasted raw barley (no peated malt), UK  Fuggle hops and a three hour boil to add flavors of milk chocolate, toffee and a mild roast. Piper Down pours a clear dark mahogany with candy cane red hues when held up to the light. Look for malt derived aromas of candied sugar, molasses, plum and a little herbal spice from the hops. Yeast influence is kept to a minimum with the ale fermentation taking place at 62 degrees which really lets the malts shine. Occasionally a Piper likes a drink or two. Too many drinks and the Pipes make the Piper a little top heavy. When the oxygen starved and pickled Piper eventually keel’s over, the call goes out loud, “Piper Down”!

Rye Ale

Reef Rye Brown Ale contains nine different grains (32% Rye), two varieties of hops, and our proprietary yeast strain. Reef Rye is an attempt to make an otherwise boring style of beer (Brown Ale) very interesting. The solid malt backbone comes from the addition of Chocolate Malt for color, and Special Roast Malt for baked bread flavors. Has a big aroma, not usually associated with Brown Ales, from Palisade hops and coriander added post fermentation. Both hops and coriander are rich in linalool. Coriander, added post fermentation with the extra hops, helps add to some of the aroma traditionally derived from dry-hopping alone.

Linalool- a naturally occurring chemical found in many flowers and spice plants with many commercial applications, the majority of which are based on its pleasant scent (floral, with a touch of spiciness). Linalool is an influential part of hop aroma in many varieties and, depending on hopping regimes, in finished beers as well. S-linalool has a sweeter, more floral aroma, while R-linalool has a wood, spicy, and lavender-like character. Pure linalool as a very pleasant sweet, tropical, fresh floral character.

Pours a crimson red color which comes from the addition of UK Dark Crystal Malts and a small addition of huskless black malt. Aroma of dried figs, lime, spruce tips and burnt sugar. Copious amounts of hops are added in multiple additions to this ample ale. From the 108 International Bittering Units (White Labs has only tested a handful of beers over 100 IBU’s) to the over two pounds per barrel of dry hopping used. Hops like Galena, Chinook and Magnum help add a resinous blood orange and grapefruit flavor to this huge Double/Imperial Red Ale.

Oatmeal Stout

Pours with abundant curtaining that settles into an opaque onyx color with red highlights and a thick beige head from the nitro treatment. Subtle aromas of a freshly made cappuccino, milk chocolate and roasted raw barley. Chocolate Malts and 20% Flaked Barley help build the cookie dough flavors and the velvety, silky smooth mouth feel. Medium body is balanced by one mid-boil addition of UK Fuggle Hops. This allows a smooth bitterness and more hop flavor to make its way into this Oatmeal Stout. Some earthy lavender flavors also are derived from the UK Fuggle hops and add to the slight hoppy aftertaste in this very drinkable ale. Our nitro treatment comes from using both carbon dioxide and nitrogen being dissolved into the beer. This creates tiny bubbles and a creamy texture when the beer is heavily agitated while being poured from a nitro tap.

Although the winters in San Diego don’t get too brutal, the brewers at Ballast Point wanted a warmer, Winter Ale that brings comfort on those days when you can see your breath. This Imperial Porter clocks in at 10% ABV and gets most of its roasted flavor from coffee beans prepared locally at Caffe Calabria on 30th Street. Winter Ales traditionally have a spice, and in this beer we chose vanilla to round out this very special “big” beer. Our Victory at Sea Imperial Porter is infused with ¾ ounce cold brewed coffee per pint.
